Are you going to do your own shoulder mount? If not, let the taxidermist order the form. Just make sure, he /she has plenty of hide to work with. Start your cut all the way around the deer, a couple inches behind the front legs.

Nope...I'm doing it myself. I am training and this is my first hands-on mounting. All three ways are correct but just wandering which is best. The buck was in rut and has a nice full neck. I want the largest measurement possible so he is true to size but I don't want to come up short when I am putting it on the form and sewing it up.
The bucks are doing a lot of chasing around here. I'm seeing a lot of deer on the side of the highway. The comment you left on the pic, He's definitely on the hit list. The pic doesn't do him justice. It looks like it's going to be a little warm for opening day. 45 to 60 yuck. Got to hope for the best. Maybe we will get lucky.

I'm in the stand at least an hour before light. Opening morning will be a early morning. It's about a half hour, to forty min walk to my stand in the dark.
