Venison Recipes??
Hey ladies, how about sharing that favorite venison recipe with us. We killed them and now we will cook them...so what is your favorite way of preparing venison for your family? I am really looking forward to this topic because I don't have much imagination and just do the same things all the time. Chili, grilled chops, spagetti with the sausage - well you get the picture. I am SO boring when I cook. Someone help me spice up the dinner table!  Have recipes other than venison that you would like to share? Feel free to add them.

wow...that looks yummy!!
when it comes to deer i usually just make burgers, meatloaf, or shepards pie....or i'll marinade backstrap/stks in ken's caesar dressing for a few hours and either throw it on the grill or in the cast iron skillet....i used to cut it up in small stks about 1in thick and coat in phelt flour (organic) and fry it in olive oil...pour some hot sauce on it and you're mouth will be very happy...the sphelt flour is kinda like cornmeal and flour combined...way better than normal flour...i use it for all my frying.
duck, dove, and quail are usually done on the grill...wrapped in bacon...lately we've been slicing each breast and sticking a piece of guda or cream cheese in and then wrapping it in bacon...beyond awesome....this past weekend by boyfriend marinaded some teal in a "secret sauce" (i think it was dales...lol.) and then wrapped them in bacon...added bbq sauce....right before they were done he added a chunk of cheddar cheese...it sounds a lil funky but OMG was it to die for.

Venison Rice and Gravy
I make gravy with ground venison and then serve it over rice. That is one of my family's favorite ways to eat venison. I used to slice the venison in small pieces, but they prefer it ground.

Venison recipes
We don't buy beef or pork very often, maybe 4 times a year! We use our venison for everything! We cook backstrap steaks on the stove or grill or broiling is good. I have never marinated the meat I just season it while cooking (usually just garlic powder, some black pepper and pour a little worchestshire sauce over the top.) we also use the ground meat for meatloaf, burgers, chili, spaghetti sauce, and more... We cut some stew meat also, and use that for soups, stews, stirfrys, kabobs, sloppy joes, etc... it is so much better for you than beef! I think beef tastes really greasy now compared with our venison. If anyone has any other good recipes, maybe for a good venison roast let me know,( I'm not very good at cooking roasts). We are almost out of our venison from last year so we've been eating a lot of shrimp and chicken meals now... We need September to come fast so we can fill up the freezer again!!!

Venison Recipe
1 pound venison cut in strips 1/2 inch thick 1/3 cup soy sauce 1/3 cup brown sugar 1 tablespoon minced onion 1/2 teaspoon ginger 2 garlic cloves crushed 1/2 cup cooking oil,( olive oil best 2 bay leaves 1/2 cup pineapple juice
Soak in marinade for at least 48 hours, 96 best. Cook on grill or cast iron fry pan, meat will cook fast, so don't over cook.
Awesome recipe, try it!

Deer Burgers On the Grill
We love grilling so most times we mix deer hamburer with a little bit of beef burger, minced onions, smidge of garlic, I whip eggs for a binder, we like to use a seasoning called accent, and a hint of A 1 sauce, top it off with sliced chedder cheese,nothing better!

My Dads Way!!!
Cut meat into 1 inch cubes , garlic powder , salt , pepper . Roll in Self Rising flour . In an iron skillet with cooking oil add the meat . Let fry until brown , turn then cook about another 4 minutes then take them out let drain on paper towel. We would sit around and eat it like pop corn .
For a roast on the grill .......cut slices in roast and put in pieces of garlic. Cover whole roast with regular yellow mustard . Wrap in tin foil . Put on grill and turn roast about every 45 minutes . Depending on the size of the roast in how long to grill for . Usally a couple of hours or so .
We also run the meat threw a cuber , makes deer cube steak , and season it with garlic , pepper ......lay tin foil on your grill and slow cook it until done . It usally doesn't take very long to cook . Now you have grilled deer and smoked all together ! YUMMY !

Forgot the gravey !
Sorry folks , after you let the deer drain on the paper towels , you pour the grease out of the iron skillet and try to keep as much crust from the deer in it . Cut up an onion into the skillet , stir for a minute then add about 1/2 cup of self rising flour and keep stirring until it turn brown a little then add water while stirring , it should be like gravey now . Add some of the fried deer and let simmer on low heat until you are ready to eat !!!

Venison Recipes
I could go on forever with this subject. We hardy ever eat anything besides game of some type. We do the traditional burgers, roasts in the crockpot with garlic and onion and some steak seasoning, as well as like a pulled pork but with the game of your choice. If using a crockpot, I do recommend adding a little more liquid than normal, as game has less fat. Some of our more adventurous meals follow:
Braised Partridge
4 partridges (or other bird of choice) 1 can condensed cream of celer soup salt, pepper, flour &nbs p; & nbsp; 1/2c chopped onion 1/4c bacon fat &nb sp; 1/4t caraway seed 1/2c milk
sprinkle partridges inside and out with salt, pepper and flour. Heat bacon fat in skillet: add partridges and brown on all sides. Add milk, soup, onion and caraway seeds. Bring to boil. Cover and cook over low heat for 30 to 40 min until tender, make sure to baste frequently. Serve over rice or pasta of your choice.
Hawaiian Burgers
1-1/2 lb of groud meat of your choice 2/3c canned milk 1/2c chopped onion 2/3c cracker crumbs 1t seasoning salt
Mix all the above and form patties. Brown in a little fat. Cover with the following sauce and let simmer for at least 15 minutes.
Sauce 24 oz can pineapple chunks drained. Retain liquid 4T cornstarch 1/2 c vinegar 1/2 c brown sugar 1/4 c soy sauce
Mix ingredients with 1c of the pineapple juice. heat until the liquid becomes thick and clear. Add the oineapple chunks. POur over burger patties and let simmer as direceted above.
Mariande for Venison
Combine 1/2c soy sauce, 1/2c lemon juice, 1/2 cup Marsala wine, 1 crushed clove of garlic and 1t ginger in a shallow dish. Marinate overnight.
Like I said, I could go on forever with this one.

Marian's Deer Roast
This is one of five recipes that I have in Deer Camp Dan's Cookbook...Enjoy!
1 deer roast garlic cloves Microwave Kitchen Bouquet spray bottled Teriyaki sauce 1 onion, sliced 1 green bell pepper, sliced 1-2 cans Campbells Golden Mushroom Soup (depends on size of meat) fresh or dried parsley flakes ground black pepper garlic powder seasoned salt Worchestershire sauce
1. Cut small slits in deer roast and insert garlic cloves to taste. Marinate in teriyaki sauce overnight.
2. Drain off marinade. Put roast in crockpot and add the remaining ingredients.
3. Cook on low for 10-12 hours. Soup will make gravy.
For barbecue-flavored deer roast follow above directions but use water instead of soup. Cut cooked meat into bite-size pieces and return to crockpot. I use Kraft Barbecue Sauce with Honey - Stir.

Deer Recipe
We mostly cut ours in little nugget pieces and deep fry them or we grind the stew meat into deer burger, which is a favorite around here. I usually put an egg in the ground meat, season it with salt pepper and garlic and a little liquid smoke, chop an onion and mix in the meat and then grill the burgers. I have heard of a recipe to try, but haven't had the chance to try it yet. maybe some of you will try it....take a deer roast and season it with salt, pepper, garlic, soy sauce and liquid smoke then sprinkle it with Lipton Onion soup mix. Wrap with several layer of aluminum foil and cook slowly on the grill (several hours). I have heard that the onion soup mix takes some of the "gamey" taste out of the roast and is delicious. I hope to try it soon.
